Flavours of the sea, infused into a hearty meal of Basmati rice, and choice of fresh prawns, squid and mussels.
Heat oil in a cooking vessel, add the garlic and chopped onions. Saute till translucent.
Add the tomato puree, worcestershire sauce, paprika powder, chilly flakes, pepper powder, bay leaf and continue to saute.
Add the Basmati Rice and saute for 2-3 mins.
Add the prawns and shellfish and stir.
Now add the chicken stock and salt to taste.
Continue to cook the Basmati Rice on high heat for 2-3 mins and than reduce heat to simmer and cook until the water is absorbed and the Basmati Rice is cooked.
Serve hot with a sprig of cilantro or coriander.
